The aromas are nothing short of intense. Think toffee apples dipped in burnt caramel with hints of honey and reduced balsamic.

This is our version of French "Calvados" but in our own unique way. A nod to our French "Thierry" and Australian heritage, "Elle Sera Pommes" translates to "She'll be Apples". A great Australian saying when everything is going to be good.

Limited to 36 bottles, we will not have these again for another three years.

Limited Edition Elle Sera Pommes, was made using biodynamic apples and aged in a ex-Apera, oak cask for 3 years.  The barrel was toasted to a No.5 char and previously held Barrel Aged Dutch Apple Pie Moonshine. The spirit came out of the cask at a whopping 69.2% and has been cut with our granite filtered spring water and bottled at a strength of 50% abv.

Sustainability underpins every single drop of our handmade Vodka's, Gin's and Whiskey. At Swiftcrest Distillery we are completely "off grid" and use wind fallen timber from our property and a wood fired boiler to heat our stills. We grow our own botanicals and use water from our natural granite filtered spring to make our spirits.
